From The Joy of Pasta by Joe Famularo & Louise Imperiale Published by Barron’s 1985 Ingredients 1 egg yolk 1/2 cup olive oil 1/2 cup vegetable oil 2 tsp of fresh tarragon or 1tsp of dried 1 clove of garlic chopped fine Salt Pepper Juice of 1/2 lemon 3 tbsp heavy cream 1/2 cup sour cream 1med red onion cut in very thin slices and quartered 1 cooked beet diced 3 sprigs of dill chopped fine In a mixing bowl or food processor, whisk the egg yolk or process it until it is lemon colored and thick. Add the olive oil in a thin stream, then add the vegetable oil also in a thin stream, processing constantly until mixture thickens to consistency of mayonnaise. Add the tarragon, garlic, salt, and pepper. Add the lemon juice and heavy cream and mix well for two seconds. Add the sour cream and mix until well combined. If using a food processor, remove the top, add the sour cream, put back the top, and mix until the sauce is well blended. Cook the pasta until al dente and return it to the pan in which it was cooked. Add the onion, beet, dill and sauce and toss so that each strand is coated. Serve

I have been growing Garlic chives in my garden for 4-5 years, much less than the Chinese, who have been growing and using this wonderful herb in their gardens for more than 3,000 years. If you enjoy leafy greens such as kale, collards, and spinach you’ll love lambs quarter and enjoy the change of pace provided by its distinct flavor. When cooking lambs quarter the easiest preparation is to simply steam the leaves and stems in a small amount of water until tender or saute in a small amount of oil (our favorite!). The greens will cook very quickly and turn a dark green color as they shrink down during cooking. The cooked greens are delicious just as they are with no additional seasoning or flavoring necessary.

We pasture our chickens for several reasons. First the eggs are great because the chickens get to eat all the things that they were made to eat (grass hoppers, larvae, bugs and the grass itself). Yes we do offer some feed especially in the winter when there are no bugs and not much pasture. Our feed is grown, grinded and bagged by our neighbor so we know exactly what is in it. Second the chickens follow the cows, clean up the larvae and spread out the cow manure. Thirdly just because chickens were not made to be kept in cages and buildings.
